Within each chapter there are explorations of life all around the United States, although the majority of the recipes and histories are heavily Euro-centered. There are a few menus, recipes and stories of Native American foodways, but even the discussions of dining in the southern states treads lightly over the issues of enslavement and the contributions of the enslaved cooks to our American food heritage.
Despite those shortcomings, this book is rich with sketches, photographs, details and stories of past foodways and worth a deep dive into our past.
