[FROM BOOKLADY COOKS] This was one our our finds at the Tucson Book Festival and it is a favorite when we want to explore food and wine pairings. We are also learning a lot about different wines and what makes them unique. Our featured recipe is:

Chilled Smoked Salmon Spaghetti with Capers and Avocado. A tribute to the chefs at Terra Restaurant - a Napa Valley favorite for decades. Leahy's recipe calls for everything to be chilled and for cold-smoked salmon, but we made it a little warmer than room temperature and used some spectacular hot-smoked salmon we picked up on our cruise to Alaska.

Reviewer's note - this is not a "tested" recipe. Just some notes about what we think we did while cooking dinner! 

We sautéed 4 thinly sliced green onions in 3 T. olive oil. Then added 4 t. capers to the pan. Just give them a brief minute in the hot oil, then transfer to a jar. Add 2 t. lemon juice, 2 t. soy sauce, and  2 t. rice wine vinegar. Cook 4 ounces spaghetti (for a 2 person dinner) and put the hot, drained spaghetti in a bowl. Add 1/2 of a small avocado, diced and 6 ounces hot-smoked salmon. Top with the dressing, sprinkle with parsley and serve with a lemon wedge and a lovely sparkly wine like this Cap Fizz from Oregon, a really lovely semi-dry pink sparkly wine.
