From Booklady Cooks - This was one of our first vintage cookbooks and it remains a favorite. Arnold Shircliffe was the caterer at the Edgewater Beach Hotel in Chicago during the 1920's and was famous for his salad and sandwiches which were the latest in healthy dining and creative use of ingredients and presentation. The format was taken from his manuscripts and lets the creator compose as they will. Recipes are arranged alphabetically by name and this is a great read as well as a great resource. And we also love the section of quotes about salads and always, we have tremendous respect for a bibliography!

Beets, lettuce, onions, anchovies, hard-boiled eggs

In a bowl lined with lettuce placed equal quantities of strawberry beets, Bermuda onions, and boiled eggs diced. Mix with a Thousand Island dressing which has had some chopped anchovies added.
