The choice of food and wines is a mater of individual taste and of circumstances. The weather, the occasions, the guests, and the mood of the moment all have to do with the choice. For this reason no book of menus can ever be an expression of personal opinion. The menus in this little book (with advice on their preparation and serving) are those of fifteen luncheons and fifteen dinners which André Simon has enjoyed at different seasons of the year and on different occasions.
